Everything is fine, when there is sunshine!!
After the fermentation process is complete, the cacao beans are put on a patio to dry. The beans are spread out evenly so that each bean gets that ray of sunshine. It is also stirred continuously so that the drying happens evenly. This process is very cumbersome and labour intensive as each bean needs to constantly checked in the span of 4-7 days if it has thoroughly dried.
Once the drying process is over, the selection/sorting process starts separating the good beans from the bad quality beans.
