The journey seems very simple when you look from the outside, but it does involve a lot of intricate steps especially when you are a Craft chocolate maker. Most of the steps involve a lot of manual work right from picking, sorting, fermenting & drying, custom roasting each batch depending on the quality of the beans (moisture, outside temperature) to of-course hand-tempering, moulding and packing. Although craft chocolate making is laborious, small custom batches allow more control and flexibility to tweak the process.
Each batch is checked at every step to ensure quality is maintained and the bad beans are eliminated.
